Fare at Many Rivers to Cross for our Chldren
The ScotiaFoundation and Jimmy Cliff Foundation satisfied palates at Monday's fundraising dinner, Many Rivers to Cross for our Children, at The Jamaica Pegasus hotel.
The menu featured a series of classics which were superb with each bite. The delightful evening began with cream of asparagus soup, grilled asparagus purÈe served with asparagus and mozarella quesadillas, followed by a magnificent beetroot and cranberry salsa with grilled zucchini, fresh coconut oil emulsion served with Scotch bonnet-smoked marlin ceviche and local cherry tomato jam.
The entrÈe was melt-in-your-mouth Scotch bonnet-perfumed poached chicken breast stuffed with Pepper Jack cheese and ripe plantain with a sorrel glaze nested on broccoli, and roasted bell peppers with wild monterey salmon with a saffron and coconut emulsion along with crusted sweet potato mash.
Vegetarians were not left out, and were also availed of the exquisite taste of a serving of herb-crusted tofu with soya reduction, Scotch bonnet-crusted salmon with june plum beurre blanc served with crusted sweet potato mash.
Dessert was simply divine. Triple cheesecake delight and poached otaheite apples infused with passion-vodka Irish cream pudding served with glazed papaya spheres followed by platters of petits fours served with coffee or tea.
It was a prefect meal for a perfect night, which was all for a very worthy cause: the children of Jamaica.
