Quick summer seafood dishes
It's officially summer and the children are off on school break but we aren't.
What is worse than coming home tired from a long day at work to a hungry child?
Seafood is quick and easy, and even better yet, the children can all help. Seafood like lobster is very expensive, but with the great prices at B&D Trawling, you can treat yourself once in a while, especially for summer, and two pounds is enough for four servings.
Here are some recipes, so you can try with your family.
Lobster Avocado Wrap
Servings: 4
Prep time: 15 mins
Cook time: 20 mins
Ingredients
9oz (about 13/4 cups) steamed
lobster meat, chopped (from 2lb
lobster)
3tbs light mayo
2tbs two per cent fat Greek
yoghurt
1tbs chopped Scotch bonnet
pepper
1 green onions, finely chopped
1tbsp fresh lemon juice
1tbsp minced parsley
1 medium avocado, diced
8 medium romaine lettuce
leaves
4 wholewheat, low-carb tortillas
(8 inches), room temperature
Preparation
1. Steam lobster meat for 15 minutes, and chop into small pieces.
2. In a medium bowl combine the light mayonnaise, yoghurt, pepper, green onion and parsley. Add the lobster, squeeze the lemon juice over the lobster and mix well.
3. Place two lettuce leaves over each wrap, top with about 1/3 cup of the lobster salad and 1/4 of the avocado. Wrap by folding the edges in slightly and slice diagonally.
Penne with shrimp and spring vegetables

The shrimp takes seconds to defrost and in no time a delicious dish was on the table. Not only does it taste great, it is also healthy.
Prep time: 8 mins
Cook time: 10 mins
Ingredients
Coarse salt and ground pepper
12 ounces penne
11b string bean
1lb peeled and deveined frozen shrimp, thawed
8oz snow peas, trimmed and
halved on the diagonal
3tbs olive oil (preferably extra-
virgin)
2tbs fresh lemon juice
2 garlic cloves, minced
1 cup crumbled feta (4 ounces)
1/4 cup thinly sliced fresh mint leaves
Preparation
1. In a large pot of boiling salted water, cook penne for five minutes less than al dente. Add asparagus; cook three minutes.
2. Add shrimp and snow peas; cook two minutes. Reserve half cup pasta water; drain pasta mixture, and return to pot.
3. To pasta mixture, add oil, lemon juice, garlic, and quarter cup reserved pasta water. Season with salt and pepper, and toss to combine. Gently mix in feta and mint; adjust to desired consistency with some pasta water as needed. Serve immediately.
Spicy salmon with mustard sauce
If you have never had spicy salmon with mustard sauce, you're missing out. The good thing about salmon is that it literally takes minutes to cook. Spicy salmon with mustard sauce is so easy, even a caveman can do it. It's all in the making of the sauce.

Ingredients
2tsp wholegrain mustard
1tsp honey
1/4tsp ground turmeric
1/4tsp ground red pepper
1/8tsp garlic powder
1/4tsp salt
4 (6-ounce) salmon fillets
Cooking spray
Preparation
1. Preheat broiler.
2. Combine first six ingredients in a small bowl, stirring well with a fork.
3. Rub mustard mixture evenly over each fillet.
4. Place fillets, skin side down, on a jellyroll pan coated with cooking spray. Broil eight minutes or until fish flakes easily when tested with a fork, then serve with rice or potatoes.
