In the hills of Irish Town St Andrew, Strawberry Hill's head chef Kingsley McGregor creates dishes as unique as the property's breathtaking views.

McGregor, a chef with 16 years' experience, has been at Strawberry Hill for nine years and has been there for previous Gleaner-sponsored Restaurant Weeks.

He has honed his skills on the job over the years. According to Ahmet Osman, food and beverage manager at the establishment, McGregor became one of the originators of new Jamaican cuisine. One of the most popular of these dishes with customers is the coconut crusted snapper.

"I like creating new Jamaican dishes," McGregor told Food. The dish he is most proud of is his recent coconut curry conch.

When at home, McGregor takes a break from the stove and enjoys simpler food options, often ready-made - like potato chips.

This year, McGregor is looking forward to the challenge of Restaurant Week, with the host of customers it usually brings.

Customers are offered a variety of seating options which, with an eyeful view in the cool cool hills, are certain to open their appetites.

McGregor selected one of the dishes which will be included on their Restaurant Week menu: Poached chicken breast with white wine cream sauce with asparagus, creamed potato, carrots and string beans.
