Spirited PAIRING FEAST
Move over wine! There's a new cocktail in town that's the perfect pairing for some delicious dishes.
In anticipation of its upcoming Summer Playground Fantasy (SPF) Weekend, Appleton Estate Jamaica Rum showed off the versatility of its products with a Special Pairing Feast at The Jewel Dunn's River Resort & Spa recently.
The four-course meal was paired with Appleton Estate Jamaica Rum-based cocktails and desserts.
The first course of allspice brioche melt with lobster, cherry tomatoes, mango chutney and pepper Jack cheese was paired with Appleton Reserve and chocolate tea martini, garnished with sambuca chantilly cream.
For the second course of breadfruit soup, with yam and goat-cheese fritters, it was all about the presentation. Presented in a breadfruit, it was paired with Appleton V/X margarita with fever grass syrup, grapefruit and coconut cream, garnished with fever grass stem and coconut spaghetti. Chef Ravi Anne and his team went all out for that one.
The smoked cornish hen roulade with honey passion fruit, poached shrimp bundle, carrot, dasheen, basil cake roasted bell pepper, scallion and cashew nut coulis with fennel mango cream was paired with Appleton 12-Year-Old mojito with orange ice cubes garnished with sweet basil jelly and green olive kebab.
The night ended with the final course of Appleton V/X Rum and raisin pudding with lychee ice cream, candied Otaheite apple and almond compote.
The SPF Weekend runs from August 2 to 5. The official cocktail of the weekend is the Summer Papaya Fusion, but you can get the party started early by enjoying the signature drink at home. Check out the recipe.
Appleton Estate Reserve's
Ingredients
2oz Appleton Estate Reserve Jamaica Rum
1oz simple syrup
1/2 oz lime juice
1/4 of a papaya
Directions
Muddle papaya with simple syrup in a shaker.
Add Appleton Estate Reserve Jamaica Rum, lime juice and ice.
Shake vigorously.
Strain in a martini glass and garnish.
