Delectable eats at Shaggy and Friends

Johnson and Wales top achiever, Jordon Chuck of JJ's Catering, did not have hands to create enough tasty spicy tuna and California sushi rolls at Shaggy and Friends last Saturday night, however, he used up all his relatives.

The suma cum laude graduate said his tuna was freshly caught Saturday morning, and using pickled ginger, an eel sauce, soy sauce, spicy mango and wasabi hot sauce, his food stand became one of the popular stops in the platinum section of the Jamaica House venue.

He complemented his exciting fare with avocado, crab and cucumber rolls, and shrimp tempura, a signature dish for his catering business.

JJ's Catering was actually one of a number of food booths catering to the needs of all-inclusive patrons in the gold and platinum sections of the event.

Rainforest Seafoods, which has its headquarters in Montego Bay but has made immense inroads in the Capital City, was also a favourite because of its bourbon mustard cream lobster, tossed with penne pasta and its shrimp, smoked salmon tortillas, pepper jack cheese wraps, and zucchini skewers.

According to the company's corporate chef, Evrol Ebanks, he and his team went all out, laying a culinary red carpet of snapper and shrimp burgers, peppered and fried shrimp, complemented by shrimp pumpkin soup.

"We had two concepts for the silver section, we offered the 'Fish Pot' and in the other we did 'Platinum Rainforest', he told Food.

Lovers of meat flocked the modern Caribbean cuisine Ashebre station, where Orane Edwards served up a treat of pepper-crusted leg of lamb.

For those with a sweet tooth, some of the most incredible pastry were on show, with Alicia Woodbine of Signature Cakes and Desserts making a signature statement, Sarah Michelle Desserts playing host to some discerning taste buds and Chocolate Dreams, stimulating the senses.

Woodbine presented tasty key lime flan with carmelised mango, rum and raisin cheesecake, marquis mud pie, mocha French macaroon, white chocolate passion fruit gateau, and hazelnut dulce leche with coffee anglaise.

Patrons realised their dreams by dipping sumptuous marshmallows into the chocolate fountain at Chocolate Dreams, and feasted on chocolate-covered coffee beans, almond butter crunch, and rum ball chocolates.
