Delicious grilled salmon steaks
As we continue in the Lenten season, here's another delicious recipe from our friends at Rainforest Seafoods.
Ingredients
1 lb Rainforest Seafoods Salmon steaks [4oz portions]
1 tbsp Old Bay Seasoning
2 cloves garlic (chopped)
1 small Scotch bonnet (chopped finely - no seeds)
1/4 tsp fresh ginger (grated)
2 tbsps orange marmalade
2 tbsps mango chutney
1 tsp Balsamic vinegar
2 tbsps honey
1 cup orange juice
Method
(1) Sprinkle Rainforest Seafoods Salmon Steaks evenly with Old Bay Seasoning.
(2) Combine all other ingredients (except chutney and marmalade) to make marinade. Place in a bowl and mix well.
(3) Divide in half. Add steaks and massage in marinade, coating evenly.
(4) Let sit for 30 minutes. Heat grill to 350. Grill for 3-4 minutes on either side to make grill (brand) markings.
(5) Remove. Place on baking tray. Mix remaining half of marinade with marmalade and chutney.
(6) Place on high heat and let reduce to a nice, semi-thick consistency. Ladle over steaks. Place in oven at 400 degrees for 3-4 minutes. Remove and serve.
Serves 4
Fishtastic! Tip
Add Scotch bonnet pepper to kick it up a notch.
Serve with roasted bell peppers.
