Recipes for World Cup

World Cup is here again, and will be in full swing in a couple of days. But, for those who enjoy inviting everybody to their house to watch the games, or those who enjoy the games alone, here is a recipe for a snack that you could literally whip up in a few minutes before the teams are led to the fields for kick-off!

FOUR-CHEESE SPINACH DIP

Preparation time: 25 minutes

Serving size: 12 persons

1 lg bag spinach (chopped)

1 pint heavy cream/coconut cream

1 ea onion (diced)

1 ea bay leaf

2 oz feta cheese (crumbled)

2 oz Cheddar cheese (shredded)

2 oz smoked gouda (small diced)

2 oz Parmesan cheese (shredded)

Salt and pepper

1 tbsp olive oil

Method of preparation:

Sauté onions and olive oil until onions become translucent.

Add bay leaf and cream and allow to reduce by half.

Add cheeses and spinach and season with salt and pepper

Cook for an additional five minutes on low heat.

Serve hot or cold.

Suggested accompaniments:

Tortillas

Crackers

Crackle bread

Other ingredients:

Crushed pepper

Callaloo (When using callaloo, add chopped callaloo after onions are sauteed)
