A journey to healthy eating with Joan Taylor
Sometimes it takes something life-changing to really put things into perspective and give you a new lease on life.
That's the case for Joan E. Taylor, who had to make a drastic dietary change that led to her first book.
Taylor recently launched her book titled Journey to Eating Healthy a collection of vegetarian recipes. However, Taylor is not a vegan, just someone looking for a healthier lifestyle.
While she wanted to share her recipes and some of what she learnt about food and a healthy lifestyle, she also wanted to share her story to show persons who might be going through a rough patch that they can overcome.
Taylor found herself in a financial crisis a few years ago and needed to make a few lifestyle changes, but she didn't expect one of the changes would be her diet. She was introduced to a budget-friendly, healthy diet by a teenager who was staying at her home. These dishes also helped her improve her health and her mood.
She thus decided to share a few of these dishes in her book, along with her story. At the launch, Taylor had some of the dishes on display - Daniel's Chilli, a tasty kidney beans chilli and black beans in tomato sauce dish, which is one of her favourites.
Taylor hopes that this will encourage a healthy lifestyle, since these are cost-effective, delectable dishes that are suitable for everyone.
