Recipe | Coffee-glazed jerk chicken breast
INGREDIENTS
Chicken breasts (left whole)
Jerk seasoning (your preferred blend)
Garlic
A little oil
Butter (small amount)
Freshly grated coffee beans or espresso
Hot water (small amount, to temper espresso)
Olive oil
Balsamic vinegar
Pinch of sugar
Optional: Scotch bonnet pepper
Optional: Extra butter or cream (to round flavours)
DIRECTIONS
1. Marinate the chicken: Leave the chicken breast whole and marinate it well overnight in jerk seasoning, garlic, oil, and your preferred seasonings.
2. Grill the chicken: Heat a grill pan, open grill, or air fryer. Place the chicken breast on the grill, remembering that chicken breast cooks very easily. Lightly brush with butter, garlic, and a little jerk seasoning as it grills.
3. Prepare the coffee glaze: Grate/grind coffee beans for a stronger flavour or prepare espresso. Add a small amount of hot water to temper the espresso. Combine with olive oil, balsamic vinegar, and a pinch of sugar. Taste and adjust.
4. Optional: Infuse with a little Scotch bonnet for heat, or add a touch more butter or cream to bring out the coffee flavour. “Coffee loves cream — it really brings out the flavour,” says Chef Jacqui Tyson.
5. Glaze and finish: Lightly coat the grilled chicken with the coffee-balsamic glaze and return it briefly to the grill, turning on both sides.
6. Slice and serve: Slice the chicken and serve as desired.
