Two-time barista champion Romell Bailey shares java journey
Consumed by the masses at the crack of dawn, the sipping indulgence of this roasted bean beverage during the day has also served as an effective way to conquer a long day. You just can’t go wrong with a fresh cup of coffee. And since today is Jamaica Blue Mountain Coffee Day, what better way to celebrate one of the best brews in the world than by catching up with Romell Bailey, the 2024 and 2025 Jamaica Blue Mountain Coffee Festival’s barista champion.
Bailey, who prefers hot coffee for clarity and comfort and cold coffee for creativity and experimentation, explained that he has been a barista for close to five years. His journey has been one filled with self-discovery, imagination, innovation, and purpose.
“I stepped into barista work out of curiosity and quickly realised it was an art form just waiting to be explored. The intricacies of understanding beans, extraction, and technique all pulled me in and made me want to master the art. This journey has shaped my discipline, creativity, and confidence, opening doors both professionally and personally,” he revealed.
With his love for coffee developing over time, what once began as a simple drink for Bailey soon evolved into an newfound passion of flavour, origin, and craftsmanship. “I am currently working at Cafe Blue at the Sovereign Centre in Liguanea, St Andrew, where we are focused on quality and consistency.”
Speaking of the most popular brews, Bailey shared that lattes, cappuccinos, and mochas are the go-to beverages for customers. “Our customers usually gravitate to our French vanilla, caramel, and hazelnut flavours,” he shared.
Known for providing great coffee service and his winning charm, Bailey entered the barista competitions to take his talents further. “A great barista combines technical skill, curiosity, and passion. And what sets me apart is my willingness to experiment and create memorable experiences, not just drinks,” he said.
Hosted annually by the Tourism Enhancement Fund (TEF) as part of the Jamaica Blue Mountain Coffee Festival, Bailey first entered the barista competition back in 2024, where he walked away as the victor. He returned in 2025, successfully defending his barista title.
“The barista competitions have pushed me to raise my standards and trust my vision. Winning the Jamaica Blue Mountain Coffee Barista competition the first time around was exhilarating. But to win twice was truly affirming,” he shared.
While clean extraction, balance, and a flavourful storytelling were essential to back-to-back wins, the secret to his double triumph was a deep understanding of the floral notes, gentle sweetness, and what he describes as layered flavour profiles paired with precise brewing techniques. “I love the elegance of Blue Mountain Coffee. It is smooth, balanced, and refined; a true expression of Jamaican excellence.”
Grateful for the life-changing experience, Bailey hopes to continue on his path to growth and development as he goes on an even deeper exploration of coffee.
