Many of his friends know him for his bird-shooting skills. But Robin Rickhi is also an expert in the kitchen. And when his brother Suresh celebrated his birthday recently, it was time to show off his culinary prowess.

He told Food he has been doing this recipe for four years and bought the special roasting box with sheet metal interior, in Miami, Florida. The finished product made up for the spoilt surprise. You can't expect to keep secrets when you notify everyone via BB messenger!

The Process

The meat is cleaned and left in a marinade of grapefruit, orange and lime juice, garlic, onions, black bean paste and his other secret ingredients, all blended together and strained first, for 24 hours.

The meat is placed in the box and a block of ice is placed on top overnight. The next day, it is roasted inside the box for three and a half hours, taken out, skin scored and put back for the skin to get crispy so those who love the 'crackling' can crunch away. It is cooled and then sliced.
