New Year's Good Recipes

Smoked Salmon Bites

A splash of pepper-flavoured vodka gives this salmon spread extra zest.

Wasabi mayonnaise sets off the smoked salmon in these rice-cracker treats. If desired, you can set out the spread, salmon, ginger and rice crackers separately and let your guests build their own (but have plenty of extra salmon on hand if you do).

2 dozen appetisers

Ingredients

1/4 cup reduced-fat mayonnaise

2tsp wasabi paste, or 2 teaspoons wasabi powder mixed with

1tsp water (see Tip)

24 mini rice crackers

4-6 ounces smoked salmon, cut into 24 1-inch pieces

24 small pieces pickled ginger, (see Tip)

1 tsp freshly grated lemon zest

Preparation

Mix mayonnaise and wasabi paste (or reconstituted wasabi powder) in a small bowl.

Top each cracker with 1 piece salmon, 1/2tsp wasabi mayonnaise, 1 piece pickled ginger and a sprinkling of lemon zest.

Tips & Notes

Make Ahead Tip: Prepare the wasabi mayonnaise (Step 1), cover and refrigerate for up to 3 days.

Tip: Wasabi paste, wasabi powder and pickled ginger can be found in the Asian-foods section of most supermarkets.

Roast Beef & Blue Cheese Spears

Ingredients

2 tsp reduced-fat sour cream

2 tsp crumbled blue cheese

2 heads of Treviso or Belgian endive, spears separated (see Note)

4 ounces thinly sliced roast beef, cut into ribbons

Preparation

Combine sour cream and blue cheese in a small bowl.

Top Treviso (or Belgian endive) with roast beef and a dollop of the blue cheese cream.

Tips & Notes

Make Ahead Tip: Prepare through Step 1 and store in an airtight container for up to 2 days.

Marinating precooked shrimp in garlic- and lemon-infused oil is a simple yet elegant appetiser.

3 tbs minced garlic

2tbs extra-virgin olive oil

1/4 cup lemon juice

1/4 cup minced fresh parsley

1/2tsp kosher salt

1/2tsp pepper

1 1/4 pounds cooked shrimp

Preparation

Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute. Add lemon juice, parsley, salt and pepper. Toss with shrimp in a large bowl. Chill until ready to serve.
