Grace Earth Chef deliciously healthy

Mandeville's Melting Pot was a delicious event in cool, cool Manchester last Friday.

During the event, Grace Foods had samples of a variety of products including their Earth Chef Veggie mince. Vegetarian never tasted so good. Try this recipe and see.

Earth Chef Veggie mince

Cooking Time: 10 minutes

Prep Time: 15 minutes

Serves: 4 persons

1 packet Grace Earth Chef

Veggie curried chicken

1 cup water, room temperature

1 cup Grace Coconut Milk,

heated

4 cloves garlic, minced

4 stalks scallion, chopped finely

2 sprigs thyme, chopped finely

3 whole pimento berries, crushed

1 tbsp Grace Vegetable Oil

1 tbsp curry

1tsp ginger, grated

8oz onion, chopped

1 pack Grace Fresh 'n' Ready Stir Fry

1 pack Grace Fresh 'n' Ready Sweet Peppers

1tbsp Grace Yellow Scotch

Bonnet Pepper Sauce

1tsp salt

Method

1. Place Grace Earth Chef Veggie curried chicken in a 2-litre (2-quart) bowl; pour on water, and add Grace Coconut Milk and leave to rehydrate for 10 minutes.

2. Mix in minced garlic, finely chopped scallion, thyme and crushed pimento berries.

3. Heat Grace Vegetable Oil in a large skillet; add curry, grated ginger and allow to burn. Sprinkle on the contents of the seasoning sachet, mix well and sauté for 1 minute.

4. Pour marinated Grace Earth Chef Veggie curried chicken into pot and stir well. Allow to brown for two minutes.

5. Add chopped onions, Grace Fresh 'n' Ready Stir Fry and stir.

6. Fold in Grace Fresh 'n' Ready sweet peppers, Grace Yellow Scotch Bonnet Pepper Sauce and stir gently.

7. Add salt to taste.

Serve with your choice of brown rice, pasta or roti.
