The researchers found that potatoes, parsnips and turnips are really good for your health. Compared to other vegetables, these are a richer source of many nutrients you tend to fall short on, like fibre, potassium and magnesium, because plants accumulate more minerals in roots and tubers. So add more 'white' to your diet.
