Rib, roast and rum returns
Rib, Roast and Rum returns this year, much to the pleasure of foodies.
The popular event's eighth staging takes place tomorrow, after a two-year hiatus. It will be held at a new venue - The Palms at the Police Officers' Club in St Andrew.
Event organiser, Tricia Knott Francis, said: "The 2016 staging will be the same as those previously held. While we have moved to a larger venue, we promise to bring our loyal patrons the traditional Rib, Roast and Rum vibe - just on a larger scale."
Special guest chefs for the evening will be: David Kay of Azuri Catering and Culinary Services, and The Jamaica Pegasus hotel; Tiffany Gooden of Confections of a Sugar Junkie; and Lianne Chen of Lilee's Cakes and Catering.
Chef Christian Sweeney, head chef and owner of Fuzion Food Service, will be the event's official catering partner. "I'll be recreating the foods patrons have grown to love. I'll be providing an array of menu items such as crayfish soup; pulled pork summer rolls; rum BBQ ribs; slow-roasted beef brisket; and smoked three-cheese mac and cheese; just to name a few."
Other menu items to look forward to are: meatless pepper pot soup; roasted bell pepper dip with coconut bammy sticks; foil-wrapped grilled fish; grilled flat bread pizza; barbecue chicken; and sesame chicken skewers.

Chef Christian Sweeney is known for his unique style. The Fort Lauderdale-trained chef, who has a bachelor's degree from the International Culinary School at the Art Institute, shares two of his highly requested rib recipes so that you, too, can have a lip-smacking and mouth-watering spread at your next barbecue.
Asian Ribs
Ingredients
1 rack of ribs
1tbs sesame oil
4tbs soy sauce
2 cloves garlic (finely chopped)
1 knob of ginger (finely chopped)
Salt and Pepper to taste
Sauce Ingredients
Mix Together:
1/2 cup pineapple juice
1/2 cup chow sow BBQ sauce
1/2 cup hoison sauce
2tbs hot pepper sauce
Directions
1. Mix sesame oil, soy sauce, garlic, ginger, salt and pepper together to create a marinade. Submerge meat into marinade overnight.
2. Place meat on grill on low heat and cook for 45 minutes to 1 hour, basting the meat generously with sauce while cooking on grill.
3. When finished, chopped ribs along centre and garnish with sesame seeds.
Rum BBQ Ribs
Ingredients
1 rack of ribs
1/2 cup red rum
1/4 lime juice
3tbs jerk seasoning
1 garlic clove (chopped finely)
Salt and pepper to taste
Sauce Ingredients
Mix Together:
2tbs hot pepper
1/2 cup red rum
1/2 cup mustard
1/2 brown sugar
1/2 cup garlic
1 whole onion (chopped finely)
1 garlic clove (chopped finely)
Directions
1. Saute onions and garlic, then deglaze pan with rum. Do this carefully as the rum is flammable!
2. Add all other sauce ingredients and simmer slowly for one hour, adding water to control thickness of sauce as necessary.
3. Combine all ingredients to season ribs and let marinate overnight.
4. Place meat on grill on low heat and cook for 45 minutes to 1 hour.
