... Margaritaville Ocho Rios?

 Margaritaville has a reputation of being a party place, whether in Negril, Montego Bay or Ocho Rios. For the culinary conscious, however, it is also known as a place where the most delectable food is served.

In Ocho Rios, for example, Sous chef Desmond Wray will serve up the tastiest of dishes in just a few minutes, whether it is fish taco, nacho, burger in paradise, mushroom burger, or any of the other tasty items on the menu.

"It's all about being prepared," he said, explaining that being prepared makes his job that much easier.

Last year, when Margaritaville Ocho Rios participated in the Gleaner-sponsored Restaurant Week for the first time, Wray was still recuperating from a three-month illness and missed out on the occasion.

This year, though, he is fit and ready and raring to showcase his culinary skills in true professional style to please the many persons expected to flock the beachside venue.

After all, he has been a chef for 25 years, and at Margaritaville for over seven years. So he should know how to titillate the taste buds.

"I became a chef so I could prepare all this beautiful food; to rise to the occasion at occasions such as Restaurant Week. From I was just a child growing up I loved cooking so that's why I became a chef," Wray told Food.

"This year, I'm expecting bigger and better things than last year," he added.

Among the items on the menu this year are the grilled fish taco and the JaMexican taco.

The amiable chef says he loves to cook while at home, for his wife and kids.

"My favourite dish (at home) is sweet and sour chicken and brown stew fish," Wray disclosed.
