Cho-cho stuffed with Eve Tuna
INGREDIENTS
2 Cho-choes split in 2, seeds removed
2 (6 oz) cans Eve Tuna, flaked 1 onion grated
1 tomato finely chopped
Salt
Scotch bonnet pepper
escallion
thyme
garlic to taste
1 cup dry breadcrumbs
1 egg, beaten
1 tablespoon oil
METHOD
1. Preheat oven to 350.
2. Fill a large pot with salted water, add cho-cho, bring to a boil.
3. Cook for 5 minutes, to soften vegetables.
4. Remove from hot water, scoop the flesh, leaving a 1/2 inch shell.
5. Lightly grease a 9 x 13 baking pan.
6. In a mixing bowl, combine flesh from cho-cho with remaining ingredients.
7. Stuff shells with tuna mixture. Drizzle with oil and top with grated cheese and nutmeg if desired.
Bake for 20-25 minutes.

Eve 3-Cheese Sardine Pizza
INGREDIENTS
2-3 cans Eve Sardines in Soya Oil
1 cup onions chopped
1 can tomato sauce
1 cup chopped sweet peppers
1/2 cup black olives, sliced
2 cups Kraft shredded Mozarella cheese
1 cup diced tomatoes
1 cup Feta cheese
Fresh Basil leaves
1 10-inch pre-made pizza dough
METHOD
1. Preheat oven to 400.
2. Spread pizza dough with tomato sauce, peppers, onions, sardines, mozarella and parmesan cheese, black olives and feta cheese.
3. Bake for 15-20 minutes. Remove from oven and add extra mozarella, parmesan and feta cheese.
4. Bake 5 minutes more. Top with Basil leaves
Serves 8-10
EVE Sardines & Tomato Gratinee
Ingredients
3 cans Eve Sardines in Soya Oil
4 large stalks escallion, cleaned and sliced
1 cup dry white wine
1/2 lb plum tomatoes, skinned and quartered
1/2 lb chopped onions
Salt & pepper to taste
2tbs each chopped fresh basil and parsley
4 oz Parmesan cheese
2 oz breadcrumbs
METHOD
1. Drain sardines, reserving oil, remove bones and flake. In a sauce pan, heat reserved sardine oil.
2. Add onions, escallions and tomatoes.
3. Add herbs, seasonings and white wine.
4. Reduce until mixtures begin to thicken.
5. Pour tomato mixture into a greased oven proof dish. Add sardines.
6. Top with cheese and breadcrumbs. Bake at 425 degrees for about five minutes.
7. Serve with a lettuce, tomato and avocado salad with basil vinaigrette.
Serves four.

Mackerel cakes
INGREDIENTS
2 cans Eve Mackerel In Tomato Sauce
1/2 cup breadcrumbs
2 eggs, beaten
1/2 teaspoon sea salt (optional)
1 Scotch bonnet pepper finely chopped
1 tablespoon fresh basil, finely chopped
3 stalks escallion
1 red sweet pepper, diced
METHOD
Drain mackerel and remove bones. In a glass bowl add mackerel, herbs, seasonings, breadcrumbs and beaten eggs. Form in to cakes. Saute in butter until golden brown, approximately 1-2 minutes per side. Top with grated cheese. Serve with Kraft Hot & Spicy Mayonnaise.

1. The food was good. The crackers were right, the fish products had the right zing. I liked them. People will buy it.
2. The tuna was great, certainly would buy this.
3. Nice quick ideas, I would add some fresh pepper though.
4. Mackerel casserole was a little on the pepper side but it's OK. The sardine was good and the tuna was excellent, yum! yum! and it was one of my favourites of the lot.
5. I really enjoyed the mackerel and macaroni combination. The sardine dish wasn't bad either.
6. I appreciate the recipes and the twist they added to these everyday ingredients. And best of all, they require no cooking.
