An Eve recipe that beats high prices

ocal food brand Eve launched its Eve-Vasion promotion at the recent Denbigh Agricultural and Industrial Show in Clarendon. Many visitors to the booth got to sample a wide range of dishes made with Eve canned products as well as recipes that they could try at home. How about trying this at home? Eve Slam-dunk Mackerel Seasoned Rice

Ingredients

1 can Eve whole kernel corn

1 can Eve mixed vegetables

2 cans Eve mackerel, drained and flaked

2 cups rice

1 small onion

1/2 tsp garlic

2 stalks scallion, chopped

2 sprigs fresh thyme

2 cups water

1/2 cup coconut milk powder

1/2 tsp salt

1tsp Scotch bonnet pepper, minced

1tbs Lider vegetable oil

METHOD

1. Heat oil in pot. Sautée onions, garlic, scallion and thyme for one minute.

2. Add water, coconut milk, salt and bring to a boil.

3. Add rice, Eve mackerel, mixed vegetables and Scotch bonnet pepper.

4. Cover pot, reduce heat and simmer until rice is cooked.

Serves 6-8.
