Pan-seared salmon fillet is back

At one with nature, sitting in the pristine Wag Water River Valley is Boone Hall Oasis. Located at 4 River Road, Stony Hill, this favourite eatery away from the hurried life of Kingston is simply as its name suggests, an oasis. It provides dinners and Sunday brunches and affords patrons with the perfect experience of commingling with nature.

The restaurant's management team, whose main aim is to offer the visitor a feeling that he/she has been transported to a stress-free environment, has once again come on board for the eighth staging of the Gleaner-sponsored Restaurant Week (RW).

Known as the Oasis in the Hills, the property boasts beautifully lush tropical gardens with an impressive array of flora and fauna bordered by the steadily flowing river.

For RW 2012, the menu boasts a traditional Jamaican fare as well as other delectable international menu options. The most sought-after meal that is usually a hit for foodies at the restaurant and will also be available on RW's menu is the pan-seared fillet of salmon.

Manager at the Boone Hall Oasis, Descar Denton, stated that the patrons loved this dish so much last year during RW that he decided to incorporate it into the restaurant's menu outside of RW.

"People just love salmon and because we had it last year and it was a best-seller, we decided to keep it as a part of the menu this year, although we have improved menu offerings," he shared.

The way that it is cooked makes it special and loved by the many palates he caters to. Cooked in a combination of butter, salt, black pepper, lemon juices and garlic then garnished with fresh parsley, this delicious meal is either served with garlic potatoes or sautéed vegetables.
