Grace Aloe Vera Jelly with Lemon Mousse

Tucked away in a very private oasis is the secluded boutique hotel Tensing Pen Resort on the cliffs of Negril. The open-air main dining house brings guests together in an intimate setting overlooking the Caribbean Sea. Tensing Pen is known to have a delectable spread on a daily basis for breakfast, lunch and dinner.

Continental breakfast is served daily in the main dining house and includes indulgences such as fresh tropical fruits, Blue Mountain coffee, cereals, toast and local jams. Eggs and omelettes are done to order and can be whipped up in no time. For dinner, the chef prepares Jamaican-style feasts using the finest ingredients and vegetables. Menus change daily depending on the seasonal ingredients.

All meals are cooked to order, so reservations are required for dinner. Here are a few of the delectable eats that can be found at Tensing Pen on the West End Strip in Negril.

Grace Aloe Vera Jelly with Lemon Mousse

16oz Grace Aloe Vera Drink

2oz sugar, granulated

1/2oz Gelatin, plain powder

2fl oz water, room temperature

1/2 pack whipped topping powder

1tbsp lemon zest

2fl oz lemon juice

Aloe vera Jelly method

1. In a bowl, 'bloom' 1/4 oz of gelatin over 2fl oz of water. Warm the gelatin over a double boiler, until the granules have been fully dissolved.

2. Remove the gelatin from the double boiler then add sugar and stir to dissolve. Strain and set aside to cool.

3. Combine the gelatin mix with the Grace Aloe Vera Drink then pour into individual containers about 1/2 the way up. Refrigerate for 3 to 4 hours.

Lemon Mousse method

1. In a bowl, 'bloom' the additional 1/2 oz of gelatin over 2fl oz of water. Warm the gelatin over a double boiler, until the granules have been fully dissolved.

2. Remove the gelatin from the double boiler, strain and set aside to cool.

3. Prepare the whipped topping powder as per the instruction on the package. Add the lemon juice, lemon zest and gelatin.

4. Remove the Aloe Vera Jelly from the refrigerator and place the lemon mousse over the top of the jelly. Chill for an additional 2 hours.

5. Garnish with fresh berries.
