It was just the right blend of Jamaican music, food and colours on display at Beaches Negril Resort and Spa recently, as scores of team members and guests came out to witness four departments face off for the top spot in the resort's Independence Day

Culinary Competition. After sampling a wide array of traditional Jamaican dishes, the resort's guests, who were the judges at the event, named the Kitchen Department the champions. The winning dishes included the traditional salt mackerel rundown, roast yam, red peas and beef soup, pumti (rare local melon-like fruit), as well as the signature ackee ice cream and breadfruit/Appleton ice cream, which secured their spots as crowd favourites.

The teams were judged on authenticity, creativity, table presentation, taste and quality. The Kitchen Department team members each won a pass for family of four, grocery baskets worth $5,000, $500 Digicel credit, and a large plaque. Today, Food highlights some of the authentic Jamaican cuisine that was on display.
