Shea's Mango Barbecue Wings

Ingredients
1lb wings cleaned (tips removed)
1 small onion
2 cloves garlic (minced)
3 sprigs thyme
1/2 Scotch bonnet pepper (minus the seeds)
2 stalks scallion
salt and pepper to taste
21/2 cups vegetable oil
Sauce:
1 cup bbq sauce
1 cup mango puree
Directions
Blend onion, garlic, thyme, Scotch bonnet pepper and scallion together with 1/2 cup oil to make a paste. Season wings with salt and pepper and wet marinade for a couple of hours, or overnight covered. Toss wings in flour seasoned with salt and black pepper. Heat remaining oil in a medium-sized pan. Fry wings until golden brown and drain on paper towel. Combine mango puree and barbecue sauce. Toss wings briefly in sauce until coated.
Pan-roasted fillet mignon with red wine demi glaze.
