Pebble's adds café to pastry business

IT HAS made its name creating exotic cheesecakes, but Pebbles Pastries has relocated and added a new element, and is now Pebbles Pastries and Café.

Relocating to 22 Belmont Road in St Andrew was what prompted owner Stacie-Ann Campbell to expand.

"The new location is bigger than where we were coming from. It was too big to just do cheesecakes, so we decided to start a café," Campbell told Food.

The café offers a range of bagels and sandwiches made from delicious bagel breads - plain, wheat, onion and blueberry. Crêpes, croissants, salads wraps, and paninis are also on the menu.

As sandwiches are a staple for every café, Campbell knew her concept would have to be different.

"That was when we decided on flavoured bacons," she explains.

She knew of flavoured bacons, and thought this would make Pebbles Café stand out. Although she was excited about experimenting with bacon, she made sure to consider her customers before overwhelming them with flavour.

"So there are 10 different flavoured bacons that I know of, but when it comes to the Jamaican palate, I know that there are a few that just would not appeal to us. So I chose bourbon barbecue, tequila, beer, cajun and jerk," she revealed.

In addition to all these delights, there is also a barista bar that offers patrons a variety of coffees, including their own Pebble's latte, marshmallow latte, mocha, cappuccino, and regular latte.

SIGNATURE OFFERING

But according to Campbell, Pebble's Pastries will never stray from what it is known for.

"Our signature is still our cheesecake, so we still plan on coming out with two new flavours each year. I want people to be able to come for a cup of coffee and grab a slice of cheesecake."

And with over 32 different flavours, there is more than enough to choose from. Campbell is also looking into creating a dairy-free cheesecake for cake lovers who are lactose intolerant or those with allergies.

Catering to various dietary needs, there are also gluten-free wraps, and even a few gluten-free cheesecake options are available - the delectable ambrosia and coconut almond cheesecakes.
