Eve Mackerel recipes
Scalloped Peppers Stuffed with Mackerel in Tomato Sauce
Ingredients
4 slices bread, white or whole-wheat
4 sweet peppers, green or red
2-3 cans Eve Mackerel in Tomato Sauce
2 cloves garlic, minced
Salt and pepper, to taste
Fresh scallion and thyme to taste
1/2 cup of Kraft Parmesan cheese, chopped parsley
Method
1. Moisten bread with tomato sauce from mackerel.
2. Season flaked Eve mackerel with garlic, salt and pepper.
2. Add scallion, thyme - and chopped onion if desired. Remove seeds from peppers.
3. Stuff with bread and flaked mackerel. Add extra tomato sauce if desired.
4. Top with Kraft Parmesan cheese. Bake at 375 degrees for 20 minutes, or until peppers become soft.
5. Top with Eve Hot Pepper Sauce and serve
immediately.

Scalloped Mackerel
Directions
• Preheat oven to 375F.
• Grease a 9x5x3-inch loaf pan or Pyrex dish
• In a bowl, combine:
Ingredients
1lb canned Eve Mackerel in Tomato Sauce, flaked
2 eggs, beaten,
2 cups hot milk
1tsp sea salt
1tsp garlic powder or fresh garlic
Cayenne pepper or Scotch bonnet pepper, to taste
1 onion, finely chopped
2 packs of Kraft Cheddar Cheese, grated
Chopped fresh parsley or cilantro
Juice of 1 lime
METHOD
1. Pour half contents of bowl in greased loaf tin. Sprinkle half grated cheese and chopped parsley.
2. Top with remaining mackerel mixture, cheese, parsley and breadcrumbs.
Bake for 40 minutes.

EVE Mackerel Cakes
2 cans Eve Mackerel In Tomato Sauce
1/2 cup breadcrumbs
2 eggs, beaten
1/2tsp sea salt (optional)
1 Scotch bonnet pepper, finely chopped
1tbsp fresh basil, finely chopped
3 stalks scallion
1 red sweet pepper, diced
METHOD
1. Drain mackerel, and remove bones.
2. In a glass bowl add mackerel, herbs, seasonings, breadcrumbs and beaten eggs.
3. Form in to cakes.
4. Sauté in butter until golden brown, approximately 1-2 minutes per side.
5. Top with grated cheese. Serve with Kraft Hot & Spicy Mayonnaise.
